My Own Handmade Miso



I think this YOUTUBE helps to lean how to make MISO even though it is in JAPANESE!


Did you know that Miso is not a rawfood?
That’s right.
Miso is a food from Japanese culture. I am from Japan and I have never seen really raw miso. Yes, some companies sell “NAMA MISO”. “NAMA” means “RAW” in Japanese, however, “NAMA MISO” doesn’t really mean real “RAW MISO”. And “NAMA SHOYU” doesn’t either. In fact, in the process to make miso and shoyu, soybeans are boiled.

Anyways, I like miso. I grew up with miso soup. Most Japanese people have miso soup almost everyday. So, I feel like I cannot live without miso. However, if you buy miso in a regular store, it may include a lot of sodium, MSG, FISH extract, and preservatives.

So, I make my own miso at home. It is very easy.
Winter is the best time to make MISO because of the lower temperature. The lower temperature helps to prevent mold growth. So, I make about 2kg miso at one time in winter, and I keep it in the refrigerator. It lasts almost all year.

Since I can adjust the amount of salt, I think it is much better than buying Miso at the supermarket. I like to add just a little bit of Himalayan Pink Salt. This salt has much more minerals and it is not processed like regular table salt. Like people in Europe used to make their cheese at home before, people in Japan used to make Miso at home. So, each family’s miso had its own unique flavor. It was called “TEMAE MISO” = My own MISO.

I recommend everyone to make their own homemade MISO for better health and to add a wonderful flavor to food!

Wow, that's very informative. Thank you so much. I am from the U.S., and my husband is Japanese. I had never had miso before he introduced me to miso soup. These days I make miso soup regularly. We now live in Japan, and there are so many kinds of miso... I had heard that some types are very processed and thus not as healthy. So I just bought some "nama" miso hoping it might be better. I haven't tried it yet, but it looks good. Maybe this winter I'll get up the nerve to try making my own.
